The structured characterisation of African ingredients: volatile and non-volatile flavour-active compounds, matrix behaviour, and temporal sensory dynamics. The Institute's characterisation datasets are available to qualified partners under documented data-sharing agreements, and feed directly into the Archive and Lexicon.

Regional palate mapping: the structured study of what each African region's cuisine is built on and how it differs. This is the research base of the Regional Palate Atlas, and the domain in which partner institutions in new jurisdictions often begin work with the Institute, under the shared method.

Sensory lexicography: the construction of a formal, peer-reviewed vocabulary for African ingredients where none exists. The Institute's programme has produced reference descriptors for a growing number of species and preparations for which the published literature is fragmented, absent, or written for other food systems.

Traditional knowledge and provenance: the gap between international instruments and operational practice in documenting and crediting indigenous food knowledge. Research here evaluates the Institute's provenance frameworks in the field and develops the instruments that make the Archive defensible.

A research or co-development partnership is governed by an agreement executed before any exchange of data or methodology takes place. It specifies the scope of work, the data and frameworks accessible to the partner, attribution requirements for all outputs, the commercial and IP framework for any new knowledge the collaboration produces, and the conditions under which either party may disengage from the arrangement.
